You must see the Alhambra in Granada, check out the Guggenheim in Bilbao, wander past the triumphant buildings of Gaudi's Barcelona. Enjoy tapas in any of the bars tucked away in medieval alley ways. Enjoy a flamenco dance in Andalucia, or a village fiesta in Bunol (where you and the locals can throw tomatoes at all day on the last Wednesday in August). Sit in an outside bar and watch the Spanish at play. Visit the Grand Mosque of Cordoba (a site you simply won't believe), run with the bulls in Pamplona, stroll Las Ramblas in Barcelona, a beautiful street open only to pedestrians and full of markets, shops, restaurants and cafes.
Go skiing in the Sierra Navada mountains, take in Real Madrid at a home game, play golf on one of the dozens of courses on the Costa del Sol in Southern Spain.
Visit the three best museums in Madrid - the Museo del Prado where you'll see the best of Spanish art in Velazquez, Goya and El Greco, as well as Picasso and more. You'll find Picasso and Dali in the Centro de Arte Reina Sofia and you'll find plenty of old masters in the Museo Thyssen-Bornemisza.
